Water Cooled vs, Air Cooled Ice Machine

We have a water cooled ice machine at our golf course. We are wondering if we would be better off with an air cooled ice machine. Can you give us some details on each and explain the differences between an air cooled vs. a water cooled ice machine?

Table Base

A good table base can come in a lot of different sizes, finishes, shapes and materials. Specific bases are designed to hold specific table tops. Round Trash Can

A round trash can has the volume to carry maximum amount of trash and waste. The circumference of a round trash can offers it the functionality to be able to carry more waste compared to a square or other shaped trash can.

Deck Furniture


We are going to replace our deck furniture around our swimming pool. The current pool furniture that we have is very outdated, old and just simply worn out. We are looking for new outdoor trash cans for our facility. It seems like our staff can not keep up with the current cans that we have implemented throughout our property. Any info would be greatly appreciated.

Today, many types of outdoor trash cans are available suiting every need and every volume of trash. They come in various sizes and shapes. You just need to choose the correct one. There are outdoor trash cans available which come with a wooden or other attractive cover. Therefore, instead of looking like a trash can, it can become a decorative piece and looks nice. At the same time it performs its functions of collecting trash.

One thing about outdoor trash cans which is important is that they must be able to be found. If they are too well hidden to where your customers cannot find them, then you will not have their help keeping your facility clean. If your members are anything like some of the ones that I have had, many may find it revolting to actually touch the trash and place it in the trash can for fear of dirt and germs. With this being said, I have found better success with an outdoor trash can that did not have a lid involved. This gives them no excuses. Trash cans with an opening on top with a tray for butts on top have worked the best for me in the past.

The size of an outdoor trash can is particularly important. It should be big in size because these cans are typically placed in high traffic areas around the country club, hotel, park or resort. Although it may sound funny to you, selecting the proper placement is also important. They should be put in places where they are easily visible and accessible.

Commercial Refrigerator: How To Keep It Clean

The condenser coil is the most important part of a commercial refrigerator; therefore, it must be cleaned with a lot of care. Similarly, the fan blades and the motor should be cleaned once a month with a dry cloth and soft brush. Outdoor Furniture And Powder Coating

Outdoor furniture requires protection from the elements. Powder coating any piece of outdoor furniture is a great answer that will help protect your piece(s) as well as make them very attractive. If it is not protected correctly, the possibility of corrosion is there. Without using liquid paint, recent technology has developed a hard, corrosion-resistant coating.

In the past, painting outdoor furniture was better than leaving the outdoor furniture unpainted. However, the paint would easily chip once it was dried. The paint would dry on the furniture uneven as paint tends to drip as well as run. In addition, depending on the angle of the surface, paint would pool in more spots than others. The piece is then heated to approximately 200 degrees. This causes the powder coating to melt and flow evenly around the piece to form a skin over the metal frame.

The thermoplastic will then cure. As it does, it goes through a chemical reaction called cross-linking that forms a powder coating that is harder than conventional paint.

Ice Machine For Your Restaurant, Resort or Country Club

We get a lot of questions about an ice machine and the difference between an air cooled ice machine and a water cooled ice machine. Many areas of the country are placing restriction on water and the cost is going up making the decision to purchase an air cooled unit a wise choice.

Here are fact you need to know about each type of ice machine:

Water Cooled Ice Machine
A water-cooled unit should only be considered if one or more of the following conditions exists where the machine will be installed:
1. The ambient air temperatures of more than 80F
2. The air contains a high level of contaminants such as grease
3. A lack of air circulation
With this being said, an example of a situation where a water-cooled or remote unit should be used would be to install the unit in a small room without air circulation. Another example would be in a small kitchen where the ice machine must be located near the cooking equipment and air temperatures are typically over 80F.

Again, the tradeoff of using a water-cooled machine is that water consumption will be higher than it would be with a comparable air-cooled unit. For this reason an air-cooled unit should be selected unless conditions warrant the use of a water-cooled machine.

An air-cooled machine is the most popular as it is the most cost effective in the long run as these units have no added water costs. Different Ice Cube Shapes

I am looking to purchase a new ice machine for our facility. I have impressed myself with what I have been able to learn in a short period of time about commercial ice machines and how they work. Can you give me some info on the different types of ice cubes that can be offered and which shapes are best for what uses?

You will need to decide upon the shape of ice cubes, you desire. The shapes on offer are diced cubes, contour cubes nuggets and flakes. Each of the different shapes is suited for different applications and has its own advantages.

Diced ice is regular ice in the shape of cubes. It is commonly used for carbonated beverages, mixed drinks, ice displays, ice dispensing, banquet services and ice retailing. The cube ice has a favorable liquid displacement.

Snack Bar

Since you have a lot of experience with different snack bars, can you give me your top two places to make our concession stand more efficient and more profitable?

Well without knowing whether you are already open or not, here are two places that almost every snack bar can improve their operation.

Staffing Plans
This is another area where so many snack bars miss the boat. It is really this simple: what needs to be prepped and when are the busier parts of the day? Fill in your schedule around these two factors. Just this weekend I was at a 27-hole golf course that was packed and closing their snack bar at 3:30pm with people literally standing a the window! Can you say throwing money away?

Of course the opposite end of the spectrum is having more employees than customers. I do understand that it is a fine line and difficult to balance. With that being said, in today's job market people are looking to work all different types of hours and if you need to make shifts shorter then you need to make shifts shorter. Remember, labor will be one of if not your largest cost year end and year out and it is up to you to properly manage it.

Concession Equipment
Before purchasing the equipment for your snack bar, you will need to have an idea of the menu that you are going to offer, the amount of space that you do have as well as the overall budget for the equipment that you will need to purchase.

If you are already in operation, do you have anything that you do not use often? Another thing that I see a lot is one machine to make one item that hardly ever sells. You need to lose that piece of equipment to create more space for something that will sell and turn you a profit. In addition, ask your employees what they need. 1. Energy Star
Making the move to purchasing an Energy Star commercial deep fryer will not only help the environment but it will also help you bottom line in the long run. The Energy Star rating that have been given to these units have a minimum cooking efficiency of 50% for gas and 80% for electric. In turn, this means that you can save up to $600 a year on utility bills.

2. Recovery time
As you compare various commercial deep fryers, you will want to also compare recovery times of the units. With a slower recovery period, you may be sacrificing performance for energy efficiency. Saving Energy Can Put Money On Your Bottom Line

More and more General Managers are being pressed by their memberships as well as the companies that they are working for to become “green.” Saving energy at your club is becoming a bigger deal to your membership than ever before and in turn it needs to be important to you.

The good news is that saving energy also equates to saving money and in these times every single penny counts. Your membership or guests are currently more aware of what it means to be “green” than ever before. The “green” issue can be a useful marketing tool if you are onboard or a PR nightmare if you believe it is a fad.

Saving Energy Tips For Your Country Club, Golf Course or Resort

  1. Use compact fluorescent light bulbs to light your facility. They use a lot less energy than incandescent light bulbs.
  2. Turn off your computer and its monitor when they aren't being used. Plug computers, printers and fax machines into power strips. When you are not using the equipment turn the power strips off. Equipment in standby mode still consumes energy.
  3. Clean your commercial refrigerator and commercial freezer on a regular basis. In addition, check all connections and hoses so there are no leaks. In addition, regularly change the filters on these units as needed.
  4. Keep your club’s vehicles in good working order. Keep maintenance records on all of the vehicles including vans, buses, golf carts and the like. Change filters regularly, and ensure the motorized engines are running smoothly. A vehicle which is maintained properly will consume less fuel. Regularly check the battery chargers as well as the amount of water in the batteries for your electric golf carts or other electric vehicles.
  5. Insist and inspect that your staff is washing only full loads of dishes and/or laundry. Washing a half-load will still use the same amount of water and energy as a full load.
  6. Start a recycling program at your country club, golf course or resort. This is an easy thing to do that does not cost much money upfront and it can give your staff a cause to come together.

Hopefully you will implement all six of these strategies as you are saving energy in the “green” environment we currently live. As stated earlier, with this being import to your members, it should also be important to you.

Buying Restaurant Equipment

As more and more country clubs, resorts and golf courses are forcing their staff to do more with less, we are finding that some employees are found making decisions about restaurant equipment for the very first time. Simply put buying restaurant equipment can be a confusing proposition if you are not that familiar with it. With that being said, the decisions that these people are making can change the outcome of their business in a positive or a negative way. For those people who may need a little guidance through the process, here are seven tips for buying restaurant equipment.

1. Just like when you are making a large personal purchase, you will want to do adequate research. You will need to go into shopping mode with a full knowledge of what type of equipment you need, what the average cost is, as well as what features are the most important to you as well as the space that you have available.

2. It sounds fairly elementary but you would be surprised at how often the power supplies for the new piece or pieces of restaurant equipment do not match each other. Meaning they have purchased a new commercial gas oven and do not have the gas hook up in their new space. Simply confirm if your equipment needs to be gas-powered or electric.

3. Especially in these economic times it is prudent to purchase what you really need to provide the food quality and the service levels that are your standard for the restaurant. It does not take long and can save you many headaches as well as money later. Believe me! If you have just bought a new commercial refrigerator that does not properly fit in to the space that you planned to put it, you have headaches.

5. While we are talking about power, you will want to make sure that your new equipment will not blow out an electrical fuse once you plug it in. Check your available amps and then make sure that your new ice machine does not require more than you have.

6. As more and more of our culture becomes green, you will want to buy restaurant equipment that is Energy Star rated. This simply means the ice dispenser in which you are buying meets the high standards of energy efficiency established by the U.S. Environmental Protection Agency and the U.S. Department of Energy.

7. Be aware of all of the manufactures warranties and future repair costs that could lie in front of you. This could sway your decision on the manufacturer to purchase as one company may be a little more expensive but they have a more extensive warranty.

By using these seven tips when you are purchasing your new restaurant equipment you are more likely to make the best decision for you and your facility.

Under Counter Wine Coolers

Depending on the type of wine you are selling at the club, some wines are more sensitive than others about such factors as temperature, exposure to UV light, unsettling of sediments and cork shrinkage. How Much Ice Does My Club Need To Make?

I am a PGA Professional that has been recently promoted to GM after the previous GM was let go. I am trying to learn as much of the F&B side as I can, since I have previously focused my career on the golf operations side of the country club equation. So my question to you is “How do I determine how much ice from my ice machines will I need for my facility?”

First of all, congratulations on your promotion! It sounds like you are trying to make the most of it and we will help in any way that we can!

This is a question asked by many and we will provide some figures that are averages for proper ice levels. The real trick is to do the research and to do the math as every restaurant, bar, country club and golf course has different needs at different times of the day. Once the math and research is done to determine how much ice you will need, please understand there are still other factors to consider on how much ice that your machine will produce. Such as, before your purchase of any ice machine, you need to determine where the ice machine will be placed in the facility. If the ice making machine will be installed near the kitchen area or any other area in which will be hotter than normal, the heat may drastically decrease the amount of ice that your ice machine will produce. This is something as a newcomer that you may not think would happen. Another consideration is that a slightly larger machine never really hurt anyone. Weigh this against the challenge that you and your staff will have when you run out of ice.

Here are the "guidelines" for ice needs for different parts of your operation from an ice maker

Restaurant ice needs are 1.5 lbs. per person
Bar or Lounge ice needs are 3 lbs. per person
Salad Bar ice needs are 30 lbs. per cubic foot
Lodging ice needs are 5 lbs per room
Catering ice needs are 1 lb per person

Standards Of Sandwich Prep Tables

I am going to be looking for a sandwich prep table for my facility. Can you discuss some of the important basics of these types of prep tables?

Sandwich Prep Table – Size
The size of a sandwich table will typically vary between 27” in width to 72” in width. It is important to understand your needs at high and low traffic times as well as the space that you will have available in order to properly make the decision on which unit will best suit your needs.

Sandwich Prep Table – Construction
Although you can find them made of various materials, most units are made of steel. You will find that the exterior construction includes heavy-duty stainless steel finish on the front of the unit, the sides of the unit, the top of the sandwich prep unit as well as the door(s). In addition, the unit will have a removable hood and insulated lid.

Typically the bottom of the unit and the rear of the unit are made of galvanized steel. The interior food liner is made of anodized aluminum for superior resistance to corrosion and prevents food spillage from entering the cabinet interior.

Options available also include self-closing doors with 120° stay open feature. Doors on these units may also have the ability to be field reversible to accommodate any needs that you may have. In addition, some of the units offer the flexibility to convert a unit with doors to a unit with drawers.

I am looking for ways to maximize my concession stand or snack bar revenues. Do you have any ideas that I can implement at a country club with a driving range?

Three Things to Keep Clean On Your Commercial Refrigerator

By keeping all of the mechanical parts of your commercial refrigerator clean, you are taking the first step to keeping your unit healthy. Due to high business levels or due to the fact that they may just not know, there are three places on a refrigerator unit that should be cleaned on a regular basis.

Commercial Refrigerator – Interior

It is important to remember not to use any steel wool, caustic cleaning chemicals or bleach when cleaning the interior of your refrigerated unit. These products can not only cause damage to the finish of the refrigerator, but they can leave behind strong chemical scents that can affect the flavor of the food. Use a solvent of warm water and mild soap to clean the inside of your unit.
Once a week, remove the door gaskets from the refrigerator and allow them to soak in a soap and water mixture for about thirty minutes. Once they have soaked for a while, simply remove the gaskets, dry them and replace them on the unit. Be sure to make sure the gaskets still create a proper seal once you have reattached them to your unit.
Shelves should also be removed and cleaned at least once a week.

Commercial Refrigerator - Condenser Coil

The condenser coil location on a unit can vary, and can be found either by checking the owner’s manual or asking the installation technician to point the unit out to you. This part should be cleaned at least once a month to keep it free of dust, dirt and lint.
Clean the condenser coil with a commercial condenser coil cleaner, which can be purchased at many kitchen equipment retailers. Brush the condenser fins from top to bottom and never side to side. Once you have completed scrubbing the fins, straighten any bent fins with a comb.
Some manufacturers such as Beverage Air, have patented cleaners that automatically clean the condenser coils daily.

Commercial Refrigerator - Fan Blades and Motor

The blades and motor on commercial refrigeration should also be cleaned once a month. Cleaning is done with a soft cloth run over both the motor and the fan blades. If it is necessary to wash the blades, cover the motor with another, dry cloth so that the moisture does not cause damage to the motor.

Q & A About Ice Machines

Ice machines or as they as also referred to as commercial ice machines are used in many different businesses such as restaurants, golf courses, country clubs, bars and office buildings. Here are some of the most common questions that VGS receives on these units.

How important is a water filter to the facility's ice machine?

A water filter will remove any odor as well as improve the taste of the ice by removing sediment, parasites, controlling calcium as well as hi-scale build-up. These factors also lead to a unit breaking down. Changing your water filter is important maintenance to do just as changing the oil in your car is important to its proper function. Depending on the amount of use that you have with your unit, the filter should be changed at least every six months.

Do I need a water-cooled system or an air-cooled ice machine?

As you can imagine there are advantages and disadvantages to each system. The air cooled units are easy to install and the purchase price is typically lower than a water cooled model. However, the air cooled units tend to be noisy and will give off heat which may not be desirable depending on the placement of the unit. A water cooled machine is also easy to install. A water cooled unit is also quieter and is typically more efficient than a water cooled unit. In some dryer parts of the country, you may be required to have a permit to run a water cooled machine.

With proper maintenance, how long can I expect an ice machine to last?

Again, the truthful answer to this question is, it depends. With that being said, most machines will last up to 10 years. Of course, this depends on if you properly maintain the ice machine as well as the water quality available and the amount of humidity in your area.

Commercial Ice Machine- What Size Do I Need?

More businesses than just restaurants use an ice machine or a commercial ice machine. However, many that open dining facilities be it a restaurant, bar, country club or golf course, do not know what their needs are going to be and how much ice that they will need to produce to take care of their clients during the high point or busy times in their business.

The common "guidelines" for ice needs from an ice maker are:

Restaurant ice needs are 1.5 lbs. per person
Bar or Lounge ice needs are 3 lbs. per person
Salad Bar ice needs are 30 lbs. per cubic foot
Lodging ice needs are 5 lbs per room
Catering ice needs are 1 lb per person


So with that being said, what else do I need to think about to determine how much ice I will need for my facility?

This is a question asked by many and we will provide some figures that are averages for proper ice levels. The real trick is to do the research and to do the math as every restaurant, bar, country club and golf course has different needs at different times of the day. Once the math and research is done to determine how much ice you will need, there are still other factors to consider. Before your purchase, you need to determine where the unit will be placed in the facility? If the ice machine will be installed near the kitchen area or any other area in which will be hotter than normal, the heat may drastically decrease the amount of ice that your commercial ice machine will produce. Another consideration is that a slightly larger machine never really hurt anyone. The extra money upfront can take a lot of pressure off of you and your staff at a later date. So it is important to weigh this against the challenge that you and your staff will have when you run out of ice at your facility.

John Boos - How the Butcher Block & Cutting Boards Started

John Boos was a blacksmith. Boos was asked by a local butcher to make him a wooden block. The butcher was intrigued about he could use a block in his kitchen after he saw how the block had absorbed the shock of Boo's hammer. That was the first of millions to be produced by the Boos Company. Once again proving that you just never know what will start a profitable business. The John Boos Company has been manufacturing hard maple butcher block products since 1887. The Boos products including butcher blocks, cutting boards and kitchen furniture are made to professional standards and are found in most restaurants, butcher shops and even the kitchen of the White House.

By the 1940s, butcher blocks were found in every restaurant, food store and butcher shop in America. Then World War II began. World War II was instrumental in changing the manufacturing philosophy of the management at John Boos and also the course of the business. The John Boos plant operated from a blacksmith shop until 1892 and then it moved across town, and began producing the Boos blocks, cutting boards and kitchen furniture as we know them now. Along the way they also become known as the Mercedes of wood cutting boards and butcher blocks.

End grain butcher blocks are built from short solid wood elements glued in such a way that only the end grain shows on both the top and bottom sides. As these elements are usually rectangular in shape, the whole board gets a mosaic or chess board pattern. End-grain butcher blocks are more durable, feature a harder surface than regular chopping blocks, and are easier on knife blades. The end-grain construction absorbs the knife between the fibers of the wood.
